HEALING, ANTI-INFLAMMATORY SEAFOOD SOUP
(Primal & Paleo-Friendly)

- 3 Tilapia Loins (Kirkland Costco brand)
- 1 lb of raw deveined shrimp, tail removed
- 1 Small/medium yellow or white onion, finely chopped
- 2 Organic celery stalks, finely chopped
- 1 Small organic carrot, finely chopped
- 1 Small organic zucchini, cut into small cubes
- 1 Large Yukon gold potato, cubed (or whatever you have on hand, or omit for Paleo)
- 2 Large cloves of fresh garlic, minced (don’t use jarred garlic)
- 1 Teaspoon avocado oil
- 2 Tablespoons finely chopped cilantro
- 2 Tablespoons finely chopped parsley
- 1 Teaspoon dried thyme
- 1 Teaspoon dried oregano
- 1 Teaspoon turmeric
- 1 Teaspoon smoked paprika
- Pink Himalayan salt
- Fine ground black pepper
- Clean filtered water (not tap water)

Method: |

- In a medium soup pot, sauté the onion, celery, carrot and zucchini in the avocado oil until softened, about 5-10 minutes.
- Add the turmeric and sauté for another minute.
- Add the minced garlic and sauté for a couple minutes being careful not to burn the garlic.
- Add about 3-4 cups of water, potatoes, thyme, oregano and smoked paprika. Once simmering, turn down to low/medium and cook for about 10-15 minutes or until the potatoes are almost ready.
- Add the tilapia loins, shrimp, cilantro, parsley, and salt and pepper to taste. Stir and submerge the seafood and potatoes. Add more water if needed.
- Simmer until the fish flakes apart and the shrimp are cooked through, about 5-10 minutes.
- Serve with fresh organic lemon wedges (ideally from your garden)
